Gluten Free Monster Mash Cookies
Chewy Halloween monster cookies loaded with M&M’s, chocolate chips, and candy eyes — made gluten free.

Ingredients
- 2 sticks (1 cup) salted butter, room temperature
- 1 cup dark brown sugar
- 1/3 cup light brown sugar (or more dark brown)
- 2 large eggs, plus 1 egg yolk
- 1 tablespoon vanilla extract
- 2 cups Bob’s Red Mill 1 to 1 Gluten-Free Baking Flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 2 cups gluten-free old-fashioned oats
- 1 1/4 cups Halloween M&M’s (see note below if you’re avoiding cross-contamination risk)
- 1 cup semi-sweet chocolate chips or chunks
- GF candy eyes
Instructions
- 1.Preheat oven to 350°F. Line a baking sheet with parchment paper.
- 2.Beat together butter, brown sugars, and vanilla until combined. Beat in eggs and egg yolk, one at a time.
- 3.Add flour, baking soda, baking powder, and salt, then beat in the oats.
- 4.Fold in 1 cup of the M&M’s and the chocolate chips.
- 5.Roll dough into 1/4-cup balls, spaced 3 inches apart on the baking sheet.
- 6.Bake 8 minutes, rotate the pan, bake 2 more minutes. Pull out and press remaining M&M’s and candy eyes into the cookies. Bake 2–3 minutes more.
- 7.Cool on the pan briefly, then enjoy warm — or store airtight up to 4 days.
